When I meet someone with very clear ideas, the need arises in me to discover the paths taken to reach certain convictions. In the case of Pau it was not going to be less. He speaks about himself with such enthusiasm and coherence that I have been discussing many of his ideas and statements with everyone who crosses my path for several days. But, above all, I am going to highlight something: CLOSENESS.
 
Pau and his people developed something like a manifesto in defense of some principles. In a world that is increasingly homogenized due to globalization, this trend has also reached the food sector, which is increasingly industrialized but, fortunately, artisans have not yet become extinct. Good!
 
Pau perfectly defines the word artisan: "one who is responsible for making the product with the love and appreciation it deserves, in the most natural way possible, minimizing the use of additives and respecting the inherited tradition, whether by giving it continuity or through innovation". 
 
In his words you can see the baggage of many years dedicated to the management of various companies related to gastronomy, but the time has come to go further and create the first company that certifies and markets 100% local artisan products in Barcelona. Before I said closeness. Now I'm talking about proximity. Everything is related, yes. It is about grouping in the same space all those proposals that offer products based on the criteria of that craftsmanship and that closeness that makes them UNIQUE.
 
Becoming an entrepreneur and starting a project of such characteristics today is really complicated, practically a utopia, but this is a project with a great future. So, here's to Pau and his henchmen, who are already part of my short list of great heroes of everyday life.
